Our sourdough process is built on a 48-hour cold fermentation. That time allows the dough to develop flavour and structure, so every base is light, digestible, and distinctly ours. We bring the same focus to sourcing: San Marzano tomatoes, Fior di Latte mozzarella, and UK ingredients wherever possible.

From dough to doorstep
The Dough
48+ hour cold-fermented sourdough. We obsess over proof, flour character, and fermentation rhythm until the base is leopard-spotted, cloud-light, and exactly where we want it.
Every batch is mixed, shaped, and cold-fermented for at least two days. The long, slow rise builds flavour and makes the crust easier to digest, so you get a base that’s crisp, chewy, and full of character.
The Ingredients
San Marzano tomatoes from the slopes of Vesuvius. Fior di Latte mozzarella from Napoli. UK toppings sourced fresh. Nothing artificial, ever.
We use DOP San Marzano tomatoes for the sauce and Fior di Latte from Napoli for the cheese. Toppings are chosen for quality and flavour, so every pizza feels both classic and fresh.
The Bake
90 seconds in our oven at 380 degrees. The perfect char, the perfect melt, the perfect bite. Every single time.
Our oven runs at 400°C+ so each pizza cooks fast: about 90 seconds. That gives you a blistered base, melted cheese, and toppings that stay bright and full of flavour.
